Good things come to those who wait, as every Guinness drinker
knows. But the days of long, thirsty queues at the bar could soon be
over, following the development of a "quick pour" system for the
creamy Irish stout. 

A new bar tap uses ultrasound technology to activate the "latent
nitrogen" in Guinness. After pulling a pint using two high-speed
nozzles, bar staff place the glass on a vibrating plate which knocks
the gas upwards to form a creamy head. 

According to Guinness's owner, drinks company Diageo, the technology
will allow bar staff to pull the perfect pint in 15 to 25 seconds,
without pausing halfway down the glass for the traditional,
time-consuming "two-part pour". 

Guinness hopes the hi-tech pump will end a trend among barmen of
refusing to serve the drink at busy times. "If you go into a
high-traffic pub at peak time, you often see a towel over the Guinness
pump. That's not because they've run out - it's just because it takes
too long," said Paul Walsh, Diageo chief executive.
